Babylon's Peak Pinotage 2021
Cultivated on the highest granite slopes of the Paardeberg mountain in the Swartland region, Babylon’s Peak Pinotage 2021 comes from dry-land bushvines planted at elevation (~700 m) on decomposed granite soils. The hand-harvested grapes undergo cold maceration, native yeast fermentation, malolactic in barrel and about ten months ageing in French oak. The result: an intensely expressive Pinotage with character and polish rather than rustic excess.
Serve at 16-18 С after decanting 20-30 minutes to allow the depth to open. This wine pairs superbly with flavourful grilled meats (South African braai-style beef or lamb chops), slow-braised oxtail or beef ragu, as well as aged hard cheeses (mature Gouda, Parmigiano-Reggiano). The dark-fruit richness, firm yet polished tannins and underlying minerality make it ideal for dishes with spice, herb crusts or charred textures.
