Choya Aged 3 Years is the premium expression of Choya’s craft umeshu tradition, fashioned from 100% Kishu Nanko-ume fruit and cane-spirit base, then aged in special tanks for three years to develop complexity, mellow acidity and harmonious fruit-sweet structure.

Aromas and flavours:
Primary
Aroma/Nose: Rich scent of ripe Nanko-ume plums, honeyed overtones, vanilla, subtle dried fruit and almond-pit nuances.
Secondary
Palate/Taste: Elegant and smooth; upfront plum-jam sweetness, light citrus acidity, soft almond-pit edge, and a hint of aged-wood or tea-leaves maturity.
Tertiary
Finish: Medium-long; lingering plum fruit, gentle honey-malt warmth, delicate almond and dried-fruit echo, leaving a clean, refined aftertaste.
Gastronomy

Best enjoyed well chilled or over a single large ice cube to highlight the fruit maturity. Ideal after dinner as a contemplative sip, or used in elevated cocktails where umeshu brings nuanced sweetness. Its gentle sweetness and mild acidity make it an excellent partner to white chocolate desserts, almond biscotti, or fresh stone-fruit salads. It also pairs thoughtfully with soft, creamy cheeses where the subtle acidity cuts through richness.
