Tasting Characteristics

A bold South African red freed from alcohol yet retaining varietal character and depth.

Darling Cellars de-alcoholised Shiraz begins life as a regular Shiraz sourced from bush-vine vineyards in the Darling region, then undergoes a specialist de-alcoholisation process (spinning cone technology under vacuum) to preserve varietal integrity while reducing alcohol to ≤0.5 % ABV.

Aromas and flavours:
Primary
Aroma/Nose: Deep ruby hue opens to ripe red berry and plum notes, crushed black pepper and hints of dried rose petals. Well-integrated oak influence suggests subtle vanilla or toast
Secondary
Palate/Taste: Despite low alcohol, delivers good varietal expression: candied cherries, redcurrant, spice, soft tannins and a hint of French oak frame. Texture is lighter than full-strength Shiraz, but the fruit remains true.
Tertiary
Finish: Leaves a clean, gently lingering peppery spice and fruit tail, with lightly drying tannins; finish is modest but satisfying given category.
Gastronomy

Serve cool (12-14 C) in a light to medium red wine glass. Ideal when you need the ritual of wine without full alcohol impact.

This de-alcoholised Shiraz stands up well to mildly spiced dishes, grilled vegetables, lean meats or a cheese board with milder hard cheeses. Because the alcohol is minimal, the fruit and spice take centre stage rather than heat, making it especially recommended with dishes that can be overshadowed by high alcohol.
