Dom Pérignon 2015 is the fruit of an exceptional harvest across Champagne’s top vineyards — a blend of Pinot Noir and Chardonnay specially selected for this vintage. After years of slow aging on fine lees, it emerges both restrained and expressive: a Champagne built not for immediate flash, but for contemplation. Its structure and clarity reflect a deliberate style, showcasing depth rather than overt opulence.

Aromas and flavours:
Primary
Aroma/Nose: On the nose, expect brioche and toasted pastry, light stone-fruit (peach, nectarine) and white flowers, with hints of citrus peel and subtle mineral chalkiness. There's a refined layer of almond-cake warmth with delicate spice and a whisper of cocoa.
Secondary
Palate/Taste: The palate combines bright citrus and orchard fruit (pear, nectarine), a gentle creamy texture, soft honeyed and nutty undertones, and a firm backbone of saline-mineral acidity. There`s also a toasty, brioche-like depth and subtle bitterness: grapefruit zest or faint petrol, that lends complexity and lift.
Tertiary
Finish: The finish is long and chiselled: mineral, slightly saline, with lingering spice, chalk, and a refined bitterness, leaving a crisp, elegant impression rather than a heavy sweetness.
Gastronomy

Serve this Champagne chilled (around 8-10 C) in a classic tulip or flute glass to let its subtle nuances unfold. Dom Pérignon 2015 pairs brilliantly with delicate shellfish such as oysters, scallops, or lightly seared scallops: seafood whose brininess and texture echo the wine`s saline precision. It also aligns beautifully with creamy shellfish pasta, sushi or sashimi, light white fish and sole, or fine poultry dishes (e.g. roasted Cornish hen) with minimal seasoning.
