Aromas and flavours:
Primary
Aroma/Nose: arm pastry notes of almond tart and honeyed raisins, baked apple skin, orange-zest brightness and underlying oak spice. At the same time there is the soft syrupy note of sultanas and gentle anise, representing the sherry barrel influence.
Secondary
Palate/Taste: Soft and plush in texture, with honey-glazed almonds, white grapes, rich vanilla cream, a twist of orange peel, and subtle ginger spice. The sherry-seasoned casks lend a sweetness of dried fig and biscuit crust, balanced by warm oak and cinnamon.
Tertiary
Finish: Long and warming, the finish fades on oak spice, soft caramel-toffee, lingering dried fruit sweetness and a faint echo of toasted oak and spice.
