This vintage cuvée channels the full potential of the Côte des Blancs terroirs – fruit from carefully selected Grand Cru and Premier Cru parcels (notably around Cramant, Avize, Chouilly) is vinified exclusively in stainless steel or neutral vessels, fermented and matured on lees for years. The result: a Blanc de Blancs that honours the tradition of vintage sparkling wine, released only when nature delivers near-perfect grapes.
Best served chilled (8-10 C), poured into a tall tulip or flute that lets the aromas open while preserving fine bubbles. This Blanc de Blancs 2014 pairs beautifully with oysters on the half-shell, scallops, lobster with a light butter-cream sauce, or delicate shellfish preparations. Its floral and mineral character also complements subtle soft cheeses, shellfish carpaccio, or a lemon-thyme risotto. For an elegant starter – think ceviche or light seafood pasta.
