Tasting Characteristics

A vivid, ruby-red Lambrusco with lively bubbles and an unmistakably dry, gastronomic character – bold, refreshing, and unapologetically Italian.

Produced in Castelvetro, the stronghold of Lambrusco Grasparossa, this wine captures the grape`s signature: deep color, fragrant red fruit, natural tannin, and vibrant acidity. Zanasi vinifies it in a dry style (Secco), allowing the variety`s richness and structure to shine without residual sweetness. Its frizzante sparkle adds lift, while short maceration preserves bold color and the grape`s typicity. This is Lambrusco made for the table – expressive, lively, and proudly rooted in Emilia`s culinary tradition.

Aromas and flavours:
Primary
Aroma/Nose: Notes of black cherry, wild berries, plum skin, violet, and a hint of spice.
Secondary
Palate/Taste: Fresh, crisp, and distinctly dry, with juicy berry fruit, light tannins, and lively acidity. The frizzante bubbles energize the palate and highlight the wine’s rustic charm.
Tertiary
Finish: Clean, medium-long, with echoes of cherry, blackberry, and a touch of earthiness.
Gastronomy

Serve well chilled, around 8-10 C, to highlight its freshness and tighten the tannins. This dry Lambrusco excels with savory, umami-rich dishes – its acidity cuts through fat, the bubbles refresh the palate, and the dark-fruit profile complements intensity without sweetness. It pairs especially well with cured meats, grilled or roasted pork, sausages, charcuterie, and Emilia-style cuisine where richness meets saltiness. Its lightly tannic structure also makes it a surprisingly good companion for hearty vegetarian dishes based on mushrooms or roasted vegetables.
