Tasting Characteristics

A white wine from Israel`s Galilee that surprises with structure, nuance and depth – not just bright fruit.

Galil Mountain Winery sits high in the Upper Galilee, producing wines from vineyards at elevation. Alon White 2021 is a thoughtfully crafted blend (not fully disclosed varietal breakdown for 2021) but the line is built from Viognier and Chardonnay varieties per estate notes.

A portion of the juice was fermented and matured in French oak barrels for three months, lending subtle oak texture without overpowering the crisp regional acidity.

Aromas and flavours:
Primary
Aroma/Nose: Bright citrus blossom, white peach and fresh mint with a whisper of lightly toasted oak. The vineyard altitude gives an underlying minerality and crispness.
Secondary
Palate/Taste: The wine offers a creamy texture from the oak component yet retains clean, fresh acidity. Flavours of ripe pear, white peach, lemon zest and light exotic spice merge with a subtle herbaceous edge. The oak is modest - vanilla and light toast, but supports the fruit rather than dominating.
Tertiary
Finish: Long, elegant and balanced, leaving a clean and mineral-tinged trail rather than a heavy after-taste. The acidity gives lift and the oak adds a soft echo of toast and subtle spice.
Gastronomy

Serve chilled around 10-12 C in a white wine glass. Given its structure and development, it suits not only lighter fare but also dishes with some weight and complexity: grilled sea bass with fennel and lemon, saffron risotto with scallops, chicken breast stuffed with herbs in a light cream sauce, or even richer vegetarian fare like coconut-curried tofu with jasmine rice. The wine`s acidity cuts through richness, while its oak-accented texture complements more structured dishes.
