From the heights of Israel`s Upper Galilee, Galil Mountain Winery`s Yiron 2019 is the estate`s flagship expression. The blend (approx. 59% Cabernet Sauvignon, 29% Merlot, 7% Petit Verdot, and 5% Syrah) reflects top-tier vineyard selection and careful oak maturation.

The vineyards benefit from cooler nights and high altitude, giving the wine depth, structure and clarity of fruit.

Aromas and flavours:
Primary
Aroma/Nose: Abundant wild berry and cherry jam aromas, underpinned by notes of vanilla, clove, toasted oak and subtle herbal lift.
Secondary
Palate/Taste: Full-bodied and well-balanced, featuring dark cherry, blackberry, plum-jam richness and a backdrop of toasted oak. Tannins are firm yet polished; acidity keeps the wine fresh.
Tertiary
Finish: Long and classic, with lingering fruit, spice and oak-driven complexity. The overall texture is opulent but structured, pointing to serious ageing potential.
Gastronomy

Serve around 18 C, decant 30-45 minutes to open up the oak and reveal the fruit. This wine pairs beautifully with richly-flavoured meats: grilled beef rib, lamb chops with rosemary, venison stew, or hearty pasta ragùs. On the cheese side, pair with aged Gouda or Manchego.
