Extra Brut Extra Old reflects Veuve Clicquot`s ambition to showcase the depth and maturity hidden in its cellars. Crafted entirely from aged reserve wines across multiple vintages, the cuvée culminates in a very low-dosage Champagne. This allows the fruit, the mineral lineage of Champagne terroir and years of bottle evolution to shine through without sugar mask. It`s less showy than the house’s standard offerings, but far more serious, structured, and contemplative.

Aromas and flavours:
Primary
Aroma / Nose: Pronounced mineral backbone - flinty, chalky undertones typical of Champagne terroir — overlaid with subtle aromas of lightly candied citrus peel, green apple and delicate white-flower notes. Hints of fresh bread crust or brioche may emerge from extended ageing on lees, adding depth and complexity.
Secondary
Palate / Taste: The attack is brisk, vivid, with vibrant acidity and refreshing salinity. Tangerine zest, green apple and citrus interplay with saline-mineral tension. Fine, persistent mousse supports a firm structure. Mid-palate unfolds with chalky minerality, damp stone, a trace of almond or biscuit, underscoring power without heaviness.
Tertiary
Finish: Long and clean, lingering mineral notes, citrus-peel bitterness, saline freshness. The finish leaves a sense of refined austerity and freshness - a Champagne that demands attention, not applause.
Gastronomy

Serve chilled (8-10 C) in a tulip glass to best appreciate the mineral depth and subtle aromas. This Champagne matches seafood with saline or iodized flavor profiles – oysters, razor clams, scallops in light sauces, sea urchin – as well as fine sushi / sashimi. Its freshness and tension also work with delicate fish carpaccio, ceviche, or herb-driven vegetable starters. With cheeses, reach for fresh goat cheeses or young chèvre; its dry, mineral character balances the creamy acidity. For richer fare, light poultry or poultry with shellfish sauces suits it.
