Tasting Characteristics

Waipara West Pinot Noir 2019 comes from the Waipara Valley, a cool-climate region shaped by limestone-rich soils and maritime influence. These conditions favor elegance and natural acidity, giving the wine tension and definition. Winemaking emphasizes restraint: gentle extraction and mostly used French oak to frame, not dominate, the fruit. The result is a Pinot Noir that leans toward precision and transparency, reflecting site character rather than overt ripeness.

Aromas and flavours:
Primary
Aroma/Nose: Red cherry, cranberry, and wild strawberry, layered with notes of rose petal, dried herbs, subtle spice, and a faint earthy undertone.
Secondary
Palate/Taste: Medium-bodied and finely structured, showing bright red fruit, savory herbal tones, and a chalky mineral thread. Tannins are fine-grained and supportive, while acidity remains vivid, keeping the palate lifted and focused.
Tertiary
Finish: Long, dry, and clean, with lingering red fruit, gentle spice, and a mineral, cool-climate close.
Gastronomy

Serve at 14–16°C to highlight freshness and aromatic detail. A short decant can help the wine open. This Pinot Noir pairs beautifully with roasted poultry, duck, pork, mushroom-based dishes, and refined vegetable cuisine. Its acidity and savory edge also work well with light game and soft to semi-aged cheeses, making it a natural partner at the table.
