Tasting Characteristics

A Blanc de Blancs that captures the stony soul of Côte des Blancs – precise, mineral-bright and exquisite.

Lilyale is the pure, uncompromised expression of Chardonnay from the Grand Cru vineyards of Avize, Cramant, and Oger. Under the stewardship of Waris-Hubert (now managed by Stéphanie & Olivier), the blend is vinified with minimal intervention – slow fermentation, long lees ageing, no dosage – to let terroir dictate the wine`s profile.

Aromas and flavours:
Primary
Aroma/Nose: Subtle yet vivid - lemon peel, green apple, fresh pear, hints of white flowers, lime blossom, and a chalky, mineral grit that hints at Côte des Blancs soils.
Secondary
Palate/Taste: Light to medium-bodied, with crisp citrus (yuzu/lemon), orchard fruit (green apple, pear), and a delicate saline-mineral backbone. The mousse is fine, delicate, supporting the fruit without heaviness. A whisper of brioche or toasted bread may emerge - the signature of extended lees aging.
Tertiary
Finish: Clean and chalky, with lingering mineral tension and citrus zest - refreshing, refined, leaving the palate bright and open.
Gastronomy

Serve chilled at 8-10 C in a tulip or flute glass. Lilyale excels as an aperitif but equally shines with delicate seafood – oysters, scallops, langoustines, fresh shellfish, ceviche, sushi, or lightly dressed fish. Its crisp acidity and mineral backbone also pair beautifully with goat cheese crostini, soft-ripened cheeses, or subtle vegetarian dishes like asparagus with hollandaise sauce.
