Tasting CharacteristicsA laser-focused, Extra Brut Champagne that captures the cool purity of Chardonnay and the quiet elegance of long lees ageing.
Waris-Hubert Blanche 2018 is crafted entirely from Chardonnay grown in the chalk-rich soils of Champagne. The vintage imprint brings clarity, precision, and a naturally lifted acidity, while the Extra Brut style (with its minimal dosage) ensures that the wine speaks with a clean, mineral voice. Its pale-gold hue reflects both refinement and restraint – a cuvée built on transparency rather than weight.
Aromas and flavours:
Primary
Aroma/Nose: Bright lemon zest, fresh green apple, and crisp pear rise first, joined by subtle white-flower notes and a cool chalk-mineral edge. A touch of citrus blossom and faint brioche emerges with air, adding quiet depth without softening the wine`s linear profile.
Secondary
Palate/Taste: The attack is brisk and finely etched, with citrus, orchard fruit, and a saline mineral thread driving the experience. The high acidity shapes a taut, refreshing structure, while the mid-palate adds gentle creaminess from lees contact. The texture remains precise, clean, and energetic, true to an Extra Brut expression.
Tertiary
Finish: Medium in length, focused, and distinctly mineral, echoing citrus peel, crushed chalk, and a delicate hint of toasted almond. The finish is refreshing and elegant, leaving the palate lifted and ready for another sip.
GastronomyServe well-chilled at 8-10 C to highlight its freshness and tension. Waris-Hubert Blanche 2018 excels as an aperitif but effortlessly elevates food. Ideal with oysters, langoustines, ceviche, and sashimi – dishes where salinity and purity shine. Its sharp acidity and chalky backbone pair beautifully with goat cheese, fresh chevre tartines, or soft, lightly aged cheeses. For a more refined pairing, serve alongside grilled sea bass with lemon oil or asparagus with beurre blanc; the wine`s tight structure slices through richness without overpowering delicate flavours.
