Fourchaume is one of Chablis’ most celebrated Premier Crus, known for ripeness balanced by a deep, Kimmeridgian-mineral core. Domaine du Colombier’s 2023 expression captures this duality perfectly. The domaine favors stainless steel and subtle lees work, preserving purity while adding gentle breadth. The result is a wine of luminosity: citrus, orchard fruit and chalky precision layered over a long, saline structure. It represents classic, terroir-driven Chablis with lifted aromatics and poised energy.

Aromas and flavours:
Primary
Aroma / Nose: Lemon zest, green apple, white peach, chalk dust, crushed oyster shell, white flowers and a touch of almond.
Secondary
Palate / Taste: Clean, tense and finely textured. Citrus and stone fruit glide over a sharp mineral spine. Lees ageing adds subtle creaminess without obscuring freshness. Acidity is vibrant and linear.
Tertiary
Finish: Long, saline and elegant — citrus peel, oyster-shell minerality and floral lift lingering with precision.
Gastronomy

Serve at 10–12 C. This Premier Cru excels with refined seafood: oysters, scallops, turbot, sole meunière, sea bass carpaccio, sushi or lobster.
