Tasting Characteristics

Bougros is one of the most commanding sites in Chablis’ Grand Cru circle, known for producing wines with both tension and impressive substance. Domaine du Colombier’s 2022 expression captures this duality with remarkable precision. The cuvée is vinified largely in stainless steel to preserve purity, with a discreet touch of oak for subtle texture. Extended lees ageing builds volume while retaining clarity. The result is a wine of depth and finesse — citrus, stone fruit and chalky minerality framed by a long, resonant finish.

Aromas and flavours:
Primary
Aroma / Nose: Lemon confit, white peach, green apple, chalk dust, crushed oyster shell, flint, white flowers and a hint of toasted almond.
Secondary
Palate / Taste: Structured, elegant and layered. Citrus and stone fruit sit atop a powerful mineral core. Lees ageing adds creaminess, while brisk acidity upholds tension. A touch of oak brings gentle roundness without overshadowing the terroir.
Tertiary
Finish: Very long, saline and sculpted — combining citrus zest, chalk and a refined, almost smoky minerality.
Gastronomy

Serve at 11–12°C. Bougros 2022 elevates refined seafood dishes: lobster, scallops in beurre blanc, monkfish, turbot, sole, caviar pairings, sashimi or langoustines. Its depth and structure also complement richer dishes such as Bresse chicken, creamy veal, truffle risotto or aged goat cheeses.
