Tasting CharacteristicsDomaine du Colombier is one of the long-established names in Chablis, and the 2023 vintage reflects the domaine’s hallmark purity. Stainless-steel vinification preserves freshness and aromatic clarity, while fine-lees ageing introduces a touch of softness. The wine delivers the essentials of Chablis: citrus brightness, linear acidity and saline minerality shaped by fossil-rich Kimmeridgian limestone. Elegant, precise and effortlessly drinkable, this is a benchmark village Chablis.
Aromas and flavours:
Primary
Aroma / Nose: Lemon zest, green apple, white peach, chalk, flint, oyster shell and subtle white flowers.
Secondary
Palate / Taste: Fresh and linear with crisp citrus fruit, orchard notes and a clear mineral line. Lees contact softens the edges, but the style remains tense and vibrant.
Tertiary
Finish: Medium to long — saline, citrus-driven and distinctly chalky.
GastronomyServe at 9–11 C. Chablis 2023 is ideal with oysters, mussels, sushi, scallops, grilled white fish, fresh goat cheese, vegetable terrines, citrus salads and light poultry dishes. Its acidity and minerality enhance seafood sweetness and cut through creamier textures.
