Tasting Characteristics

El Rom Vineyard is the crown jewel of Cabernet in Israel. At nearly 1,000 meters above sea level, it is the Golan Heights’ coolest, highest site, planted on ancient volcanic basalt soils. The 2021 vintage benefited from a long, slow ripening season that produced fruit of exceptional purity and concentration. After 18 months in French oak, the wine emerges dense yet refined, layered with dark fruit, savory complexity and the unmistakable mineral tension of basalt terroir. A benchmark Cabernet built for decades.

Aromas and flavours:
Primary
Aroma/Nose: Cassis, blackberry, black cherry, blueberry, cigar box, cedar, graphite, violet, dark chocolate, espresso and warm baking spice.
Secondary
Palate/Taste: Full-bodied and deeply structured. Concentrated black fruit, plum skin, cocoa, roasted coffee, cedar, tobacco leaf and volcanic mineral undertones. Firm, fine-grained tannins give architecture; acidity is fresh and precise. The texture is powerful yet composed, opening in layers with air.
Tertiary
Finish: Very long, refined and persistent — cassis, spice, cedar and mineral depth lingering with impressive clarity.
Gastronomy

Serve at 16–18°C. A magnificent match for ribeye, lamb shank, slow-cooked short ribs, venison, smoky brisket, truffle dishes, mushroom ragù and aged hard cheeses. The wine’s intensity and volcanic minerality elevate richly textured, umami-driven cuisine.
