Tasting Characteristics

A Sauvignon Blanc from Israel that stands apart – offering freshness, elegance and depth in equal measure.

Crafted by Golan Heights Winery in the Golan / Galilee region, the 2023 Yarden Sauvignon Blanc draws from high-elevation vineyards on volcanic soils. This vintage faced a challenging season, with cooler sites and smaller yields, yet brought exceptional clarity and tension.

A small portion of the wine was barrel-fermented to enrich texture, while the majority remains steel-fermented to retain crispness and varietal purity.

Aromas and flavours:
Primary
Aroma/Nose: Bright notes of guava, gooseberry, lime, fig leaf and lemongrass emerge, layered with a subtle hint of spice and flint-driven minerality.
Secondary
Palate/Taste: The palate is energetic - green apple, lemon zest, white peach and fine tropical pineapple notes are framed by fresh acidity. The oak component adds silent intrigue: light vanilla and toast, but never dominating.
Tertiary
Finish: Long and refined. The mineral undercurrent carries through with a clean, crisp echo of lime peel and chalky stone. The finish soars rather than lingers heavy, leaving a vibrant, refreshing aftertaste.
Gastronomy

Serve chilled to 10-12 C in a white-wine glass. This wine`s precision and structure make it ideal for modern cuisine: try pan-seared sea bass with fennel-lemon salsa, risotto with asparagus and lemon zest, grilled chicken breast with herb-cream sauce, or simply fresh goat cheese with a drizzle of thyme-honey. Its acidity cuts richness, its minerality pairs beautifully with salt and herbal accents.
