Pampelle Ruby emerges from the sun-kissed isle of Corsica where Star Ruby red grapefruits are hand-harvested, then macerated and partially distilled along with citrus peels and botanicals in France’s Cognac/Charente region. The result is an aperitif liqueur that skillfully balances sweet and bitter, built for modern spritzes and refined pre-meal moments.
Serve well chilled, over plenty of ice, ideally in a large wine glass or spritz glass. Garnish with a slice of ruby red grapefruit. Use as the base for a Spritz (2 parts Pampelle, 3 parts Prosecco, 1 part soda) or a lighter Negroni variation. Its balanced bittersweet citrus profile makes it perfect as an aperitif to open a meal. It also pairs wonderfully with lightly seasoned seafood — like razor clams with lemon-herb dressing or grilled prawns — and with fresh citrus-based desserts such as grapefruit sorbet or lemon panna cotta, where the bitterness echoes the dessert’s tartness.
