Tasting Characteristics

Raoul Gautherin & Fils Chablis Grand Cru Vaudésirs 2021 comes from one of Chablis’ most elegant Grand Cru climats, known for producing wines of finesse rather than brute power. The cooler 2021 vintage emphasizes freshness, clarity, and terroir expression. Chardonnay grown on Kimmeridgian limestone delivers tension, salinity, and layered complexity. The winemaking approach favors purity, allowing subtle texture and mineral structure to define the wine rather than overt oak influence.

Aromas and flavours:
Primary
Aroma/Nose: White flowers, lemon zest, and green apple lead, followed by crushed stone, wet chalk, and a subtle saline note. With air, faint hints of hazelnut and citrus oil emerge.
Secondary
Palate/Taste: Medium-plus bodied and precise, with flavors of citrus, ripe pear, and stone fruit framed by firm acidity. The texture is fine and controlled, with a mineral backbone that gives the wine structure and length without heaviness.
Tertiary
Finish: Long, clean, and saline, marked by citrus freshness and persistent chalky minerality typical of Grand Cru Chablis.
Gastronomy

Serve at 10–12°C to highlight freshness while allowing the wine’s texture to unfold. A short aeration in the glass enhances aromatic detail. This Grand Cru pairs best with refined seafood dishes such as oysters, scallops, turbot, or lobster, where minerality and acidity mirror the natural sweetness of the dish. It also works beautifully with subtle, cream-based sauces that respect the wine’s precision.
