Tasting Characteristics

Terroir du Haydi is Domaine G. Metz’s expression of Pinot Noir shaped by Alsace’s cooler climate and limestone-influenced soils. The winemaking approach favors restraint: gentle extraction, minimal oak impact, and an emphasis on fruit purity and acidity. The result is a red wine that leans toward finesse and gastronomic balance rather than density, making it highly adaptable at the table.

Aromas and flavours:

Primary

Aroma/Nose: Red cherry, wild strawberry, and cranberry, layered with subtle floral notes, a hint of forest floor, and light spice.

Secondary

Palate/Taste: Light to medium-bodied and finely textured, combining bright red fruit with fresh acidity and soft, polished tannins; the wine remains precise and linear, with a clear sense of place and no excess weight.

Tertiary

Finish: Clean and gently mineral, tapering into a fresh, dry close with lingering red fruit and a touch of earthy nuance.

Gastronomy

This Pinot Noir is built for food rather than contemplation alone. Its freshness and low tannin profile make it a natural partner for poultry, veal, and mushroom-driven dishes, as well as lighter preparations of duck. It also works well with soft and semi-soft cheeses, where acidity and delicacy matter more than power.
