Chateau Climens 2012
Château Climens, known as the “Lord of Barsac,” produces one of the world’s greatest sweet wines exclusively from Sémillon. The 2012 vintage faced challenging weather, but Climens’ meticulous biodynamic work and micro-parcel vinifications resulted in a wine of striking purity and finesse. Long maturation in French oak refined the texture while preserving the crystalline energy that distinguishes Barsac from richer, heavier Sauternes. The result is a noble sweet wine—lush, fragrant, but lifted by a vibrant limestone-driven backbone.
Serve lightly chilled (10–12 C) in a medium white-wine or Sauternes glass. Château Climens 2012 excels at the table: pairing beautifully with foie gras torchon, white meat with fruit sauces, poached lobster, or rich cheeses like Roquefort or aged Comté. Its sweetness and acidity also make it exceptional with spicy Asian dishes (ginger, lemongrass, mild chili), and it shines with desserts featuring citrus, stone fruit, almond or light pastry. Its elegance prefers subtlety over heavy sugar.
