Chateau D'Yquem 2021
Château d’Yquem remains the benchmark of botrytised Sauternes, and the 2021 vintage continues that legacy. Grapes harvested selectively under noble rot, fermented and matured in fine French oak barrels, yield a wine of remarkable concentration yet refined balance. The 2021 shows the estate’s trademark harmony: luscious botrytised richness paired with vibrant acidity, creating a wine both opulent and elegant — destined for decades of evolution.
Serve chilled (10–12 C) in a medium-sized white or dessert wine glass to reveal the layers gradually. Château d’Yquem 2021 is ideal with foie gras torchon or seared foie Gras, blue-veined cheeses (e.g. Roquefort), caramelised nuts desserts, crème brûlée, fruit tarts (especially stone fruit or citrus), or aged pecorino with honey. It also pairs beautifully with rich Asian dishes — duck à l’orange, pork belly in miso glaze — where its sweetness and acidity tame fat and spice.
