Tasting Characteristics

A rare and highly anticipated Sauternes that transforms a challenging vintage into a wine of precision, freshness, and controlled opulence.

The 2021 Château d’Yquem reflects the estate’s ability to adapt to demanding conditions while preserving its identity as the benchmark of sweet wines. Produced in extremely limited quantities, the wine emphasizes purity and tension rather than sheer richness. Noble rot developed selectively, shaping a Sauternes of clarity and energy, where sweetness is balanced by vibrant acidity and structural finesse. The result is a wine that favors elegance and longevity over immediate power.

Aromas and flavours:

Primary

Aroma / Nose: Expressive aromas of candied citrus, orange peel, ripe peach, apricot, honeycomb, saffron, and subtle floral notes, layered with hints of ginger and exotic spice.

Secondary

Palate / Taste: Lush yet poised, offering concentrated flavors of stone fruit, citrus confit, and acacia honey, supported by precise acidity that gives lift and definition. The texture is satin-like, with remarkable balance for the vintage.

Tertiary

Finish: Exceptionally long and refined, marked by lingering citrus zest, honeyed fruit, and a delicate bitter-sweet tension.

Gastronomy

Best served lightly chilled in a tulip glass to fully express its aromatic complexity. Château d’Yquem 2021 pairs naturally with foie gras, where sweetness and acidity enhance richness, as well as blue cheeses such as Roquefort. For a refined dessert pairing, apricot tart or citrus-based desserts echo the wine’s vibrant fruit profile without overwhelming its structure.
