Tasting Characteristics

“La Vache qui Tache” 2023 — literally “the cow that stains” — is a joyful, natural-style red from young Burgundy winemaker Aimé Blouzard. Made from Gamay and Pinot Noir, it dances with crunchy red fruit, peppery spice, and a breezy freshness that makes it instantly drinkable. Unfined, unfiltered, and full of charm, it’s a playful yet precise expression of modern Burgundy — vibrant, honest, and irresistibly easygoing.

Aromas and flavours:
Primary
Aroma/Nose: Playful and aromatic — ripe red cherry, wild strawberry, and raspberry, with subtle hints of white pepper and crushed violet.
Secondary
Palate/Taste: Fresh and energetic — bursting with juicy red fruit, a touch of spice, and a smooth, supple texture. Pure fruit expression with light tannins and lively acidity.
Tertiary
Finish: Clean and mouthwatering, leaving a lingering note of cherry skin and subtle minerality.
Gastronomy

Perfect lightly chilled (13–14 °C) with charcuterie, grilled vegetables, roast chicken, or soft cheeses. It shines with duck rillettes, mushroom tart, or goat cheese salad, and is equally enjoyable with pizza or a simple plate of cold cuts. A natural choice for picnics, aperitifs, and spontaneous gatherings — the bottle you open when laughter fills the room.
