Tasting Characteristics

Sigalas ‘AA’ 2023 draws from ancient, basket-trained vines grown in Santorini’s pumice-rich volcanic soils. The blend of Assyrtiko and Athiri, fermented and aged gently in stainless steel, expresses clarity, tension and terroir purity. The result is not a showy wine, but a precise, mineral-driven white that captures the island’s dryness, heat, wind and sea in crystalline form.

Aromas and flavours:
Primary
Aroma/Nose: Lime zest, grapefruit peel, green apple, white-flower blossom, a hint of sea salt and crushed stone — mineral and fresh.
Secondary
Palate/Taste: Light-bodied, crisp acidity, bright citrus (lemon, lime), green apple, subtle white peach or stone-fruit hint, herbal lift, with a backbone of chalky minerality and saline freshness. Fresh, vibrant and focused.
Tertiary
Finish: Long, clean, slightly saline and mineral, with lingering citrus-mineral echoes and a soft floral-herbal aftertaste.
Gastronomy

Serve well-chilled (8–10 °C). The wine shines with fresh seafood — oysters, grilled or steamed fish, calamari, octopus, shellfish; Mediterranean salads with herbs and olive oil; feta or fresh goat cheeses; light mezé; sushi or ceviche. Its acidity, mineral core and saline notes make it perfect for dishes that are fresh, briny, herbal, or citrus-bright.
