Springo Sui Lieviti is Le Manzane`s tribute to the historic Prosecco style: fermented in bottle, left on its lees, and unfiltered. With zero dosage, the wine shows absolute purity – no added sugar, no disgorgement, no manipulation. The fine sediment gives depth, texture, complexity and a gently savory edge, while the hillside vineyards of Conegliano contribute precision and mineral definition. This is Prosecco for purists: rustic elegance, modern confidence, and complete authenticity.

Aromas and flavours:
Primary
Aroma/Nose: Bread dough, wild herbs, citrus peel, unripe pear, white flowers, crushed stone, a light note of almond skin and yeast.
Secondary
Palate/Taste: Firm acidity, bone-dry, slightly creamy from the lees. Citrus (lemon, bergamot), green apple, faint brioche, a savory herbal thread, and tactile minerality. Bubbles are softer and more natural compared to Charmat-style Prosecco.
Tertiary
Finish: Long, saline, dry, gently yeasty - persistent and gastronomic.
Gastronomy

Serve at 8-10 C in a tulip-shaped glass; pour gently if you want clarity, or swirl the bottle softly if you prefer full cloudiness and texture. Its Brut Nature dryness and savory, lees-driven complexity make it exceptionally food-friendly. The wine`s tension, mineral cut and subtle yeasty richness pair beautifully with seafood – especially simple, honest preparations like grilled fish, sardines, clams, or shrimp.
