Tasting Characteristics

Isolano 2021 is born from high-altitude vineyards on the eastern slopes of Etna, where Carricante develops its signature tension and saline vibrancy. Dolce&Gabbana’s artistic partnership amplifies the wine’s identity: refined, sculpted and unmistakably Sicilian. Gentle ageing in steel with a touch of oak preserves clarity while adding subtle roundness. The result is a precise, mineral-driven white that expresses volcanic terroir with sophistication and harmony.

Aromas and flavours:
Primary
Aroma/Nose: Lemon zest, grapefruit, green apple, Mediterranean herbs, broom flower, crushed pumice stone and a delicate saline note.
Secondary
Palate/Taste: Elegant, vertical and refreshing. Citrus (lemon, grapefruit), green apple, subtle white peach and hints of wild herbs. A defined mineral backbone gives focus, while brisk acidity adds tension and lift. Texture is sleek, lightly creamy from lees, yet always tight and volcanic.
Tertiary
Finish: Long, clean, mineral and slightly salty, with lingering citrus and herbal nuance.
Gastronomy

Serve at 8–10°C. Isolano pairs beautifully with refined seafood and Mediterranean dishes: grilled sea bass, prawns, octopus salad, linguine alle vongole, sushi, ceviche, vegetable antipasti, goat cheese and ricotta-based dishes. Its saline acidity and mineral core enhance delicate, aromatic preparations.
