Brewed using the Kimoto method—a centuries-old fermentation technique that relies on natural lactic acid bacteria—it produces a sake with remarkable depth, complexity, and character. The result is a bold yet refined Junmai that balances umami richness with vibrant acidity, offering both strength and grace.

Aromas and flavours:

Aroma/Nose: Steamed rice, toasted nuts, and faint aromas of mushroom, melon, and cedar.

Palate/Taste: Full and layered, revealing savory umami, rice sweetness, and hints of almond, chestnut, and subtle spice.

Finish: Clean yet lingering, with earthy undertones and a bright, refreshing close.
Gastronomy

Serve slightly warmed (40–45°C) or at room temperature to enhance its depth and umami profile.
