Byrrh is a classic French aperitif created in 1866 in Thuir, in the Roussillon region, by the Violet brothers. It belongs to the quinquina family: a base of fortified red wine (mistelle) infused with cinchona bark, which gives the drink its distinctive gentle bitterness, alongside coffee, cocoa and dried fruit notes. For decades Byrrh was one of the most popular aperitifs in France, and today it is back in favour with bartenders.
