Cabécot 2024 from Domaine Bonnet-Huteau is a natural sparkling wine made using the ancestral method, bottled mid-fermentation with no fining, filtration, or corrective winemaking. This cuvée is built for drinkability rather than contemplation — low alcohol, high acidity, and pure fruit expression. The 2024 vintage leans especially fresh, with bright aromatics and a nervous, energetic profile. It’s intentionally unpolished, deliberately alive, and meant to be opened young.
Serve very well chilled and open carefully. This is an ideal aperitif wine, but it also works beautifully with light, salty, and texture-driven dishes. High acidity and low alcohol make it easy to drink over a long table, especially in warm weather.
