Tasting CharacteristicsReal Tesoro Pedro Ximénez is produced from sun-dried PX grapes, a traditional method that concentrates sugars and flavors before fermentation. Fortified and aged oxidatively in oak through a solera system, the wine develops extreme richness, viscosity, and complexity. This is a textbook Pedro Ximénez style—dark, luscious, and unapologetically sweet—designed for slow sipping rather than casual refreshment.
Aromas and flavours:
Primary
Aroma/Nose: Intense aromas of raisins, dried figs, dates, and molasses, layered with notes of coffee, cocoa, and subtle balsamic tones.
Secondary
Palate/Taste: Exceptionally rich and velvety, with flavors of dried fruit, caramel, dark chocolate, and espresso. The sweetness is pronounced but balanced by gentle acidity and warming alcohol, preventing heaviness.
Tertiary
Finish: Very long and persistent, with lingering notes of raisin, coffee, cocoa, and a soft oxidative nuance.
GastronomyServe slightly chilled at 12–14°C in small glasses. This Pedro Ximénez pairs naturally with desserts based on chocolate, caramel, or dried fruit, and works exceptionally well poured over vanilla ice cream. It also complements blue cheeses, where salt and intensity counterbalance the wine’s sweetness, and can be enjoyed on its own as a contemplative after-dinner pour.
