Tasting CharacteristicsA reference point for The Dalmore’s elegant house style, this 12-year-old expression is built around balance and accessibility. In contrast to the more structured Sherry Cask Select, it favours smooth integration and rounded richness, allowing the interplay of ex-bourbon and Oloroso sherry casks to unfold with ease and immediacy.
Aromas and flavours:
Primary
Aroma/Nose: Orange zest, dried fruit, toffee, vanilla, and hints of dark chocolate and roasted nuts.
Secondary
Palate/Taste: Smooth and rounded – layers of sherry sweetness, coffee, chocolate, cinnamon, and citrus peel unfold over toasted oak.
Tertiary
Finish: Long and elegant, with lingering orange, cocoa, and spiced oak warmth.
GastronomyBest enjoyed neat or with a drop of water to reveal its rich layers. Perfect alongside dark chocolate, roasted duck, or orange-infused desserts. It also pairs beautifully with nutty pastries and aged cheeses.
