Tasting CharacteristicsKi No Bi Kyoto Dry Gin is the first Japanese gin ever produced in Kyoto, blending time-honored distilling artistry with local ingredients and spiritual precision. Crafted from a rice-based spirit and pure Fushimi water, it embodies the harmony of Japanese nature. The aroma unfolds with fresh yuzu, hinoki wood, and green tea, leading into a palate of juniper, ginger, and gentle pepper warmth. The finish is long, dry, and elegant — calm yet vibrant, a reflection of Kyoto’s balance between tradition and innovation.
Aromas and flavours:
Primary
Aroma/Nose: Yuzu peel, cypress wood, and green tea.
Secondary
Palate/Taste: Bright and layered — citrus, juniper, ginger, and sansho spice.
Tertiary
Finish: Long, dry, and delicately herbal with warm spice tones.
GastronomyServe over ice with premium Japanese tonic water and a twist of yuzu peel for a refreshing Ki No Bi & Tonic. Ideal for refined cocktails like the Japanese Martini, Yuzu Negroni, or Kyoto Collins. Perfectly complements sushi, sashimi, or steamed fish, where its clean citrus-herbal notes enhance delicate flavors. Ki No Bi is not just a gin — it’s a quiet expression of Japanese craftsmanship and precision.
