Tasting CharacteristicsChai Mas Blanc 2023 emerges from the vineyards of Languedoc under the Paul Mas umbrella — a straightforward, blend-driven white crafted for freshness and versatility. Each variety is vinified separately, then blended and rested in stainless steel, preserving clarity, bright aromatics and a crisp profile. The wine reflects a modern, approachable style: breezy, aromatic, and designed for uncomplicated pleasure rather than heavy complexity.
Aromas and flavours:
Primary
Aroma / Nose: Bright citrus zest (lemon, lime), white flowers, a gentle hint of peach or tropical fruits, subtle green herbal notes and a light mineral edge — fresh and uplifting.
Secondary
Palate / Taste: Clean and crisp, delivering lemon-lime freshness mixed with white-fleshed fruit, a touch of stone fruit or peach, and a subtle salinity/mineral nuance. The mouthfeel is light and fluid, with a smooth texture and a fresh acid backbone.
Tertiary
Finish: Short to medium, dry and refreshing — ends with citrus peel, soft herbal-mineral echo and a gentle crispness that invites another sip.
GastronomyServe chilled (8–10 С) in a simple white wine glass to highlight freshness and aromatics. Chai Mas Blanc 2023 works great as an aperitif or for light meals: grilled seafood (shrimp, sea bream), Mediterranean salads with goat cheese, lean poultry, light pasta with olive oil and herbs, or warm-weather tapas. Its acidity and fruitiness also match nicely with sushi, ceviche or fresh vegetable dishes.
