Tasting CharacteristicsA beautifully crafted natural orange wine, Château Saint Cyrgues Salamandre reveals the wild side of the Rhône’s white grapes. Layers of apricot, citrus, and spice unfold through a textured palate shaped by skin maceration. It’s vibrant yet grounded — an elegant balance of fruit, tannin, and subtle oxidative charm that makes every sip tactile and expressive.
Aromas and flavours:
Primary
Aroma/Nose: Aromatic and inviting, with notes of dried apricot, orange peel, honeycomb, chamomile, and subtle spice. Hints of tea leaf and candied citrus reveal its skin-contact complexity.
Secondary
Palate/Taste: Rich yet vibrant, with flavors of peach, tangerine zest, and herbal tea balanced by fine tannins. The mouthfeel is silky and structured, supported by a gentle phenolic grip and bright acidity.
Tertiary
Finish: Long and savory, leaving impressions of dried fruit, spice, and citrus peel with a lingering, slightly nutty minerality.
GastronomyA versatile match for Mediterranean and Middle Eastern cuisine. Its structure complements roasted vegetables, tagines, falafel, or aged cheeses, while the acidity refreshes grilled fish or poultry with citrus marinades. Try it with pumpkin curry or mushroom risotto for a perfect balance of spice and depth. Serve slightly chilled at 12–14 °C to showcase its texture and aromatics.
