Tasting CharacteristicsPierre Vallet XO 40% is a quintessential expression of Grande Champagne finesse – the “Premier Cru” of Cognac. Produced by the Vallet family, who have been crafting exceptional eaux-de-vie for generations, this XO is a triumph of time, balance, and patience. Long aging in Limousin oak reveals a deep aromatic complexity where fruit, spice, and rancio unfold in perfect harmony.
Aromas and flavours:
Primary
Aroma/Nose: Elegant and mature, with aromas of dried fig, apricot, and candied orange peel, followed by layers of vanilla, toasted hazelnut, and fine oak. Subtle notes of cocoa and old leather emerge with time.
Secondary
Palate/Taste: Silky and powerful, offering flavors of ripe plum, honey, and nutmeg, evolving toward rancio tones of walnut and cedar. The texture is full-bodied yet refined, showing remarkable balance between fruit and wood.
Tertiary
Finish: Exceptionally long and lingering, with echoes of dried fruit, spice, and gentle oak sweetness that leave a warm, satisfying aftertaste.
GastronomyPierre Vallet XO 40% is a cognac to be savored slowly – ideal for reflective evenings or after a fine meal. Enjoy it neat in a tulip glass to let its aromas evolve with each sip. It pairs beautifully with blue cheese, roasted nuts, or dark chocolate truffles, as well as with a fine cigar, where its rancio and nutty depth complement the earthy complexity of tobacco.
