Tasting CharacteristicsRedbreast 12 Year Old stands as the benchmark of traditional Irish craftsmanship — a pure pot still whiskey of remarkable depth and balance. Matured in both bourbon and Oloroso sherry casks, it reveals waves of dried fruit, honey, and toasted oak, carried by creamy texture and pot still spice. Each sip offers a perfect interplay of sweetness and structure — rich, complex, and profoundly satisfying, a timeless expression of Irish whiskey heritage.
Aromas and flavours:
Primary
Aroma/Nose: Expressive and inviting — notes of dried fruit, sultanas, and honey intertwine with vanilla, toasted oak, and warm baking spices. A hint of sherry nuttiness and red apple adds depth.
Secondary
Palate/Taste: Rounded and full-bodied — luscious flavors of stewed fruit, nutmeg, and sweet barley complemented by hints of cream, roasted nuts, and gentle spice from the pot still character.
Tertiary
Finish: Long and evolving, with layers of sweet fruit, spice, and lingering oak warmth.
GastronomyAn exceptional companion to aged cheeses, roasted nuts, and dark chocolate, this whiskey also pairs beautifully with smoked meats, honey-glazed ham, or apple crumble. Its smooth, rounded sweetness complements desserts like bread pudding or crème brûlée. Serve neat or with a drop of water at 18–20 °C — the ideal contemplative pour for evenings where tradition meets quiet luxury.
