What is tequila añejo?

Tequila añejo (often searched simply as 'tequila anejo' or 'aged tequila') is made from the juice of blue agave (Agave tequilana), grown in the Mexican state of Jalisco and a few neighbouring regions protected by a designation of origin. After distillation, the spirit ages in oak barrels of up to 600 litres for between one and three years. That is far longer than reposado, which is why añejo tequila is darker, more complex and clearly marked by the character of the wood.

During this long maturation, the distillate draws aromas of vanilla, caramel, tobacco, leather and warm spice from the barrel, and the taste of agave weaves through them into a deep, harmonious whole. Tequila aged for even longer – over three years – is called extra añejo and ranks among the most exclusive agave spirits in the world.

Tequila añejo vs blanco vs reposado

All styles of tequila are set apart above all by the time they spend ageing in wood. Clear, unaged tequila blanco is fresh and distinctly agave-forward, while tequila reposado rests from two months to a year, gaining smoothness and a golden hue.

Tequila añejo goes a step further – at least a full year of ageing makes it the most complex, dark and woody of the three. While blanco is best in cocktails and reposado is the all-rounder, añejo is the classic sipping tequila, served much like a whisky or cognac. The right choice depends on the occasion and whether you are after the freshness of the agave or the depth of the wood.

How is tequila añejo made?

Production of añejo begins in the agave fields, where the plant matures for six to ten years. Harvesters known as jimadores extract the heart of the agave – the piña – which is roasted so its starch turns into sugars. After crushing and pressing, the juice is fermented and distilled twice to produce a clear spirit.

The spirit then goes into oak barrels – often previously used for bourbon, whisky or wine – where it rests for at least a year. It is during this long stage that tequila añejo takes on its deep golden colour and rich aromas. The finest bottles carry the 100% agave mark, guaranteeing that only sugars from the agave were used in production.
