What is tequila añejo?

Tequila añejo (often searched simply as 'tequila anejo' or 'aged tequila') is made from the juice of blue agave (Agave tequilana), grown in the Mexican state of Jalisco and a few neighbouring regions protected by a designation of origin. After distillation, the spirit ages in oak barrels of up to 600 litres for between one and three years.
