Tasting CharacteristicsLe Sylphe Cabernet Franc 2021 comes from old vines rooted in clay-limestone soils typical of the Saumur basin. Natural vinification preserves the grape’s leafy aromatics, dark fruit, and earthy undertones without masking them with oak. The 2021 vintage delivers clarity, freshness, and tension — a wine that balances rustic authenticity with refined structure. True to the Bouchet style, it is unpolished yet captivating, carrying the raw pulse of the vineyard.
The Experience
Aroma/Nose:
Palate/Taste:
Aromas and flavours:
Primary
Aroma/Nose: Black cherry, blackberry, cassis leaf, graphite, violets, damp earth, a touch of tobacco and a faint wild note from natural fermentation.
Secondary
Palate/Taste: Medium-plus body with firm yet supple tannins. Flavours of dark berries, blackcurrant, bramble, crushed herbs and earthy-mineral notes. A savoury herbal edge and vibrant acidity give the wine structure and length. Texturally robust but lifted.
Tertiary
Finish: Long, earthy and slightly smoky, with persistent black fruit and mineral grip.
GastronomyServe at 15–17 C after a short decant (20–30 minutes). This natural Cabernet Franc pairs beautifully with grilled meats, roasted lamb, duck breast, beef stew, charcuterie, mushroom dishes, beet-based cuisine, and aged hard cheeses. Its herbal, mineral spine complements earthy flavours and robust textures.
