Tasting CharacteristicsLes Folies du Noyer Vert 2021 reflects a more concentrated side of Frédéric Sigonneau’s winemaking. Sourced from a historic Chinon parcel, the wine benefits from older vines and deeper-rooted Cabernet Franc, giving it natural density without sacrificing purity. Fermented with whole clusters and aged in concrete or neutral wood, it remains fresh and transparent while gaining aromatic depth and textural finesse. The 2021 vintage delivers precision, ripe red fruit and elegant tannins — a sophisticated, site-driven Chinon.
Aromas and flavours:
Primary
Aroma / Nose: Black cherry, raspberry, redcurrant, violet, graphite, crushed herbs and light spice.
Secondary
Palate / Taste: Medium-bodied, structured yet silky. Red and dark berries intertwine with floral lift, savory herbs and a fine chalky tension. Tannins are firm but elegant, acidity brisk.
Tertiary
Finish: Long, mineral and aromatic — graphite, cherry skin, subtle spice and floral tones lingering gracefully.
GastronomyServe at 14–16 C. Les Folies du Noyer Vert 2021 pairs beautifully with dishes that benefit from freshness and fine tannins: roast duck, grilled lamb chops, beef carpaccio, braised rabbit, wild mushroom dishes, lentil ragout, charcuterie or earthy semi-hard cheeses. Its balance of structure and brightness makes it highly versatile at the table.
