The wine is crafted with minimal intervention: spontaneous fermentation, gentle extraction, and no heavy oak aging — allowing the grape’s native expression to shine. The result is light, fresh yet structured wine, embodying the region’s cool Atlantic influence, limestone soils and generational tradition.
Aromas and flavours:
Primary
Aroma/Nose: Red cherry, wild strawberry, raspberry, hints of damson plum, gentle herbal tones (thyme, Mediterranean scrub), subtle violet floral touches and faint earthy-mineral undercurrent.
Secondary
Palate/Taste: Light to medium-bodied, with juicy red fruit (cherry, raspberry, red currant), delicate plum, soft herbal spice, subtle earthiness and a fine mineral backbone. Tannins are refined and lightly textured, adding structure without heaviness; acidity is lively and refreshing — delivering a vibrant, easy-drinking red.
Tertiary
Finish: Medium, with lingering red berry fruit, a touch of red plum skin bitterness, soft herbal accents and a gentle saline-mineral note that reflects Bairrada’s proximity to Atlantic coast.
