Tasting CharacteristicsGreywacke Sauvignon Blanc 2023 embodies the essence of Marlborough — vivid fruit purity balanced by precision and elegance. Created by Kevin Judd, one of New Zealand’s most acclaimed winemakers, it layers tropical ripeness with herbal lift and chalky tension. The palate glides between lush passionfruit and cool mineral restraint, shaped by seamless acidity and fine texture. It’s energetic yet sophisticated — a Sauvignon Blanc of depth, character, and luminous clarity.
Aromas and flavours:
Primary
Aroma/Nose: Highly expressive and pure — bursting with passionfruit, ripe lime, and guava, balanced by green herbs, elderflower, and a hint of smoky flint. Layers of citrus blossom and lemongrass give lift and aromatic complexity.
Secondary
Palate/Taste: Juicy and vivid — flavors of gooseberry, grapefruit, and white peach flow over a crisp mineral core. The mouthfeel is textured and slightly creamy from partial barrel fermentation, lending depth to its vibrant acidity and fruit precision.
Tertiary
Finish: Long and refreshing, with citrus zest, tropical fruit, and subtle wet-stone minerality lingering in perfect balance.
GastronomyA perfect partner for seafood and bright, zesty cuisine. Pair it with fresh oysters, seared scallops, ceviche, or sushi, where its acidity amplifies freshness. It also complements grilled asparagus, citrus-marinated chicken, goat cheese salads, and Thai dishes with lemongrass or ginger. For a refined pairing, serve it alongside lime-drizzled prawns or creamy burrata with basil oil — its citrus vibrancy and mineral tension create pure harmony. Serve chilled at 8–10 °C to capture its crisp intensity and aromatic lift.
