Tasting CharacteristicsBlue Canyon Cabernet Sauvignon 2021 showcases the sunshine-driven generosity of California fruit. Sourced from warm inland vineyards with cooling evening breezes, the wine focuses on plush fruit rather than heavy tannin. Short maturation in American oak adds notes of vanilla, cocoa and gentle spice without overshadowing the core of blackberry and plum. It’s crafted as a contemporary, accessible California Cab — polished, juicy and ready to drink.
Aromas and flavours:
Primary
Aroma / Nose: Blackberry, black cherry and plum layered with hints of vanilla, toasted oak, cocoa powder and a touch of sweet spice. Subtle herbal edges (bay leaf, sage) add lift.
Secondary
Palate / Taste: Medium+ body with soft, rounded tannins. Flavours of ripe blueberry, cassis and dark plum blend with mocha, warm spice and a light oak sweetness. Fresh acidity keeps the wine lively, and the structure remains smooth, not aggressive.
Tertiary
Finish: Moderate length, carrying dark fruit, soft spice and a gentle chocolate-vanilla note.
GastronomyServe at 16–18 C. This California Cabernet works beautifully with grilled beef burgers, rib-eye steak, BBQ pork ribs, meaty pasta dishes, or roasted vegetables with herbs. Its smooth tannins, ripe fruit and subtle oak align well with umami-rich, lightly charred or sauced dishes. It also pairs comfortably with aged cheeses, especially cheddar or Gouda.
