Tasting CharacteristicsTabalí Pedregoso Carmenère Gran Reserva 2021 comes from the Limarí Valley, a cooler coastal region defined by limestone-rich, stony soils and strong Pacific influence. These conditions temper Carmenère’s natural ripeness, preserving acidity and aromatic clarity. The Pedregoso vineyard style emphasizes structure and minerality over sweetness. Careful oak aging adds depth and polish without masking varietal character. This is a modern, terroir-focused Carmenère built around balance rather than excess.
Aromas and flavours:
Primary
Aroma/Nose: Black cherry, ripe plum, and blackberry layered with notes of graphite, black pepper, dried herbs, and subtle cedar.
Secondary
Palate/Taste: Medium-plus bodied and structured, showing dark fruit, savory spice, and a clear mineral backbone. Tannins are firm but refined, providing grip and length. Fresh acidity keeps the wine focused and avoids the softness often associated with the variety.
Tertiary
Finish: Long, dry, and savory, with lingering dark fruit, herbal notes, and a mineral, slightly saline edge.
GastronomyServe at 16–18°C and consider a short decant to open aromatics and integrate oak. This Carmenère pairs best with grilled beef, lamb, pork, or dishes seasoned with herbs and mild spice. Its savory profile also works well with roasted vegetables and dishes featuring earthy elements, while semi-aged cheeses complement its structure without overpowering its balance.
