Tasting CharacteristicsPedregoso is one of Tabalí’s most terroir-driven projects, sourced from extremely stony soils in the Limarí Valley, where Syrah and Carménère develop concentration without losing freshness. The 2020 vintage balances ripe dark fruit with savory, peppery notes and pronounced mineral tension. Oak ageing adds structure and depth but remains secondary to the vineyard’s rocky signature. This is a wine that leans toward precision and grip rather than softness or sweetness.
Aromas and flavours:
Primary
Aroma / Nose: Blackberry, black cherry, and plum, layered with black pepper, graphite, dried herbs, and subtle smoky notes.
Secondary
Palate / Taste: Dry and structured, with dense dark fruit carried by firm acidity. Syrah brings spice and grip, while Carménère adds depth and savory tones. Tannins are present and refined, giving the wine a focused, linear shape.
Tertiary
Finish: Long and persistent, finishing on dark fruit, spice, and a pronounced mineral echo.
GastronomyServe at 16–18°C and consider decanting. This wine pairs best with grilled and roasted red meats, especially beef and lamb, where its structure and peppery profile meet richness head-on. Slow-cooked dishes, smoked elements, and herb-driven cuisine align naturally with its savory depth. Aged hard cheeses also complement its tannins and mineral finish.
