Tasting CharacteristicsFrom Bagieniec in Lower Silesia, within reach of Wrocław, this 2021 Johanniter shows why PIWI varieties matter in Poland: it stays dry, structured, and naturally bright, then gains shape from time on the lees. The result is more about texture and precision than fruit-forward flash—clean lines, orchard fruit, and a subtle savoury edge that reads “table-ready.”
Aromas and flavours:
Primary
Aroma / Nose: Green apple, pear, and citrus zest, layered with notes of fresh bread, yeast, and a subtle herbal accent.
Secondary
Palate / Taste: Dry and focused, with fresh acidity supporting orchard fruit and a creamy, lees-derived texture. The mid-palate shows gentle depth without weight, keeping the profile clean and food-oriented.
Tertiary
Finish: Medium in length, clean and slightly savory, with citrus peel, yeast notes, and a mineral echo.
GastronomyServe well chilled at 9–11°C. This Johanniter works especially well with dishes that benefit from both acidity and texture: freshwater fish, poultry with light sauces, and vegetable-based cuisine. Lees ageing allows it to handle richer elements such as butter or cream in moderation, while fresh cheeses and grain-based dishes complement its savory undertone.
