Tasting CharacteristicsBlanc de Chenin 2022 embodies the natural, biodynamic signature of Domaine M & S Bouchet. The old vines rooted in clay-limestone soils bring depth, tension and salty minerality. Fermentation with native yeasts and aging in neutral vessels preserve purity and texture. This is Chenin in its raw, authentic Loire form — crystalline fruit, gentle waxiness, subtle oxidative touches and an unmistakable sense of place.
Aromas and flavours:
Primary
Aroma/Nose: Quince, pear, yellow apple, chamomile, honeycomb, crushed stone and a faint oxidative nuttiness characteristic of natural Loire Chenin.
Secondary
Palate/Taste: Medium-bodied with a waxy, textural mid-palate. Flavors of pear, quince paste, citrus pith, white flowers and chalky minerality. Bright acidity cuts through the richness, offering clarity and lift. A touch of nuttiness and lanolin echoes classic Chenin nuance.
Tertiary
Finish: Long, saline, mineral and slightly honeyed — elegant yet rustic.
GastronomyServe at 10–12°C. This Chenin shines with roasted poultry, herb-driven white meat dishes, creamy sauces, veal, grilled or baked fish, scallops, vegetable tarts, mushroom dishes, and cheeses such as aged goat cheese or Comté. Its acidity and waxy texture give it exceptional food versatility.
