Tasting CharacteristicsFossilis Chardonnay 2024 offers a modern Portuguese interpretation of the variety, favouring purity over opulence. Fermented and aged entirely in stainless steel, it highlights Chardonnay’s zesty, mineral side, lifted by the maritime climate of the Setúbal Peninsula. A touch of lees contact adds subtle texture without weight, creating a wine that is refreshing, elegant and exceptionally easy to enjoy.
Aromas and flavours:
Primary
Aroma/Nose: Lemon zest, green apple, white peach, wild herbs, sea breeze minerality and a hint of white flowers.
Secondary
Palate/Taste: Fresh and lively, showing citrus (lemon, lime), crisp apple, gentle stone-fruit notes and a faint herbal edge. Sleek texture from lees ageing, balanced by a clean, linear acidity. Light, refreshing and coastal in style.
Tertiary
Finish: Medium, mineral, citrus-driven, with a lingering lemon-saline impression.
GastronomyServe at 8–10°C. Excellent with seafood, shellfish, grilled fish, sushi, salads, vegetable risotto, lemon-roasted chicken and soft cheeses. Its bright acidity and mineral freshness make it perfect for light, zesty dishes and Mediterranean cuisine.
